In Search of Grass-fed Meats -- Restaurants

To finish off our overview of grass-fed beef, following is a list of Colorado restaurants that buy and serve grass-fed meats from local ranchers. (If you missed the post on the many benefits of grass-fed beef, you can access it here.) This may not be complete, and some restaurants may change their menu items, depending on the season, so call first to be sure they'll have grass-fed meats available.

Over the past few weeks, we've tried grass-fed meats at three different restaurants in Denver -- Le Central, The Mercury Cafe, and Potager -- with extremely satisfying results. It's a great way to sample meats before you place an order for yourself.

Remember, we can all help to support Colorado ranchers by asking our favorite chefs and restauranteurs (and your local grocers) to offer locally raised, grass-fed meats, eggs and dairy.

Garden Design and Planning - a la Permaculture, with Sandy Cruz and Jason Gerhardt

It’s time to begin creating this year’s garden! Learn to imitate Nature by establishing garden polycultures that produce a diverse mix of vegetables, fruits, herbs and flowers.We’ll take a virtual tour of Sandy’s garden, consider springtime gardening priorities, and look at strategies for working with our local Rocky Mountain climate. Using Permaculture design principles, we’ll consider where to place the garden, how to build it, what to plant in it, and where to obtain seeds, bedding plants, shrubs and trees. Transition Denver is sponsoring this event, designed to present an innovative approach to neighborhood farming that involves the neighbors in the process. Kipp Nash has devoted three years to developing a unique way of bringing the Community Supported Agriculture (CSA) model to his South Boulder, Colorado neighborhood. Kipp utilizes the available land (often his neighbors' front and back yards) in Martin Acres to raise organically-grown produce, which is then sold to his neighbors in Martin Acres and in Farmer's Markets. Interest in this model of local food production and community development is growing (pun intended) like crazy and Kipp is one of the first to start sharing his project, dreams and ideas with others. Permaculture through the Seasons - An 8 Month Design Certification Course

How can humans live on Earth in harmony, abundance, grace and ease for eons into the future?Permaculture is the art of creating living ecosystems that imitate nature to provide food, fuel and shelter. Using innovative and indigenous agricultural techniques as well as appropriate technologies, course participants will learn to move towards living sustainably. Through multifaceted learning techniques — hands-on projects, tours, slide shows, exercises, lectures and readings — students will acquire knowledge of Permaculture Design for our Rocky Mountain bioregion and beyond. Course meets the third weekend of each month through October 18th.Program Cost is $950.00 if registered by 1/21/09, $1050.00 if registered by 2/21/09, and $1200.00 after 2/21. Slow Food Denver is sponsoring an open house given by two of its members, Jan Webster and Elayne Gallager, to learn about an exciting project they are working on in Chiapas, Mexico. Elayne is a board member of Starfish, a Colorado organization working with indigenous women in Guatemala and Chiapas, Mexico. The project is called Mujeres de Maiz (Women of the Corn) and the goals are to raise the production and the consumption of native organic corn and to improve the standard of living, dignity and nutrition standards of these indigenous women, their families and communities. About Home Grown Colorado

For years, I have been an avid organic gardener, turning our yard into a mini-urban homestead -- growing raspberries, strawberries, blueberries, apples and a meaningful kitchen garden, with lettuce, tomatoes, peppers, onions, radishes, herbs, carrots, asparagus, eggplant, broccoli, cabbage and more. A few years ago, we expanded into a neighborhood community garden, which allowed us to add corn, pumpkins, squashes, beans, artichokes, and potatoes. I became a passionate supporter of Denver Urban Gardens and an advocate for community gardens and urban agriculture. In mid-2007, I left a 30+ year career in Corporate America to follow my growing interests and long-held beliefs in growing food organically, promoting sustainability and supporting our local Colorado economy. That's how Home Grown Colorado was born. I hope it will build awareness and generate discussion on these important issues. I enthusiastically invite your comments and participation.
